Nalli Gosht Biryani Recipe
After gathering all the essentials, you must mix them in the right proportion to cook Nalli gosht biryani. Follow these steps to cook mouth-watering biryani:
- Step 1: Lamb Shank Curry
Let’s begin by cooking lamb shank curry, which we will later combine with rice to make biryani. To cook it perfectly, pre-heat the cooker with some ghee. After it becomes hot, add lamb shanks, bay leaf, and other essential ingredients for the curry. Also, add some water and let it cook for 2 to 3 whistles. Remember to close the lid of the pressure cooker.
- Step 2: Cooking Rice
After cooking Lamb shank curry, let’s move on to cooking rice for the nalli gosht biryani. Cooking rice is quite simple: boil the water twice the weight of the rice, then add the rice, salt, and whole spices to it. If you cannot understand this, consider the following example. Suppose you have to cook 200 gm of rice, then take 400 gm of water and add the above-mentioned ingredients. Note: boil these grains until they are 70% cooked.
- Step 3: Layering and Garnishing
In this step, we will layer and garnish our nalli gosht biryani with bay leaves, almonds, black cumin seeds, raisins, and onions. Fry the onions with the bay leaf and remove them once you are done. Add black cumin seeds, raisins, and almonds to the same oil and fry these, too.
- Step 4: Mix Them Up!
Now, add the above-prepared fried onions, some almonds, raisins, some mint and coriander leaves, and rose water to the rice.
- Step 5: Add Dum To Your Biryani
Take the necessary vessel and add some oil to it. Now, start building the first layer of nalli gosht biryani by adding half of the rice, fried almonds, raisins, mint, coriander leaves, lemon juice, and fried onions. Also, sprinkle mace, nutmeg powder, green cardamom, and some yoghurt. Repeat the same process for building the second layer for your biryani. Now, let it simmer for 25- 30 minutes or until the rice is cooked.
- Bonus Step
People generally prefer to cook something other than mutton at home as it might turn out to be too chewy or hard. We suggest cooking the mutton following a slow cooking process. This will help tenderise the meat, making it soft, juicy, and easy to chew. Also, we recommend using healthier types of rice, like basmati rice, etc.
